Nigeria – Kilishi

Nigeria is a country blessed with tastes from many places, this one comes from Northern Nigeria, it’s a beef jerky. Kilishi is a beef jerky prepared through two main steps, including sliced beef into very thin layered pieces and then dried well but not to crispy form, the last step includes marinate it in a solution of herbs, veggies and spices to give it a taste.

Nigeria – Ewa Riro

Ewa Riro will tell the story of a stirred black-eyed peas’ taste. It is a loved and respected dish from Yoruba tribe in Nigeria, because of the long lasting cooked cuisine within the Yoruba speaking people. It’s title “Ewa Riro” suggest that it is a stirred or stewed beans roast, this however doesn’t mean it to be stirred or stewed.

Nigeria – Efo Riro

Efo Riro is a Yoruba tribe term meaning “stirring green leaves”, ego stands for “to stir” and Riro stands for “green leaves”. In Yoruba land you may even get snails and shrimps included. I promise once you taste this dish, you won’t forgive yourself to cook it daily.
