Pakistan – Traditional Bihari Kebab with Rogni Naan and Dahi Ka Raita

Kebab is made from small chunks of meat thread on the skewers and grill over charcoal. The flavor and texture of it is very appetizing. Kebab dishes are very aromatic. They have melt in the mouth texture. The word kebab come from the Arabic language. There are many types of kebab:

  • shami kebab
  • aloo kebab
  • reshmi keba
  • boti kebab
  • seekh kebab
  • chapli kebab
  • tandoori kebab

Kebabs are made from garam masala, salt, black pepper, green chili, meat, lemon juice, egg, cornstarch etc. Kebabs are very famous dish of Pakistani cuisine. Kebab taste delicious with a yogurt chutney (sauce). Kebabs are one of the most popular snack in Pakistan. Kebabs are served on the the skewer and perfect to pick and eat. Kebabs are famous because of it smoky flavor.

Rogni naan is a popular bread in Pakistan.Naan has a thick, flaky texture. Bread is a vital part of the three meals of the day. A naan recipe involves flour, salt, ghee, water etc. Naan also come with different types of stuffings like potato naan, keema naan, cheese naan, chicken naan etc.

Raita is a condiment made of dahi (yogurt). Raita is made with yogurt which is high in protein. You can eat raita with kebabs, chicken, rice, naan etc. The raita is made with salt, black pepper, vinegar, yogurt and vegetables.

Ingredients for making bihari kebab

  • mutton small chunks 1 kg
  • ghee 250 g
  • ginger paste 3 tbsp
  • garlic paste 2 tbsp
  • yogurt 2 cups
  • onions fried 1 small
  • coriander 1 tsp
  • salt 1 tbsp
  • garam masala 2 tsp
  • cumin powder 2 tsp
  • crushed red chili 2 tbsp
  • black pepper 1 tsp
  • green chili 6 to 8
  • turmeric 1 tsp

Method of cooking

Step 1

Take a blender and blend the onions and yogurt and keep aside.Take a large bowl and add mutton,onion and yogurt paste, ginger, garlic, red chili, black pepper, coriander, garam masala, cumin powder, salt, green chili, turmeric, ghee mix and cover for 5 hours.

Step 2

After 5 hours add mutton chunks on the skewer and grill it over charcoal and brush with butter.Grnish it with some lemon juice, green coriander and crushed black pepper.

Ingredients for making rogni naan

  • white flour 2 cup
  • atta 1 cup
  • baking soda 2 tsp
  • salt 1 tsp
  • ghee 3 tbsp
  • milk 5 tsp
  • water 2 cups

Method of cooking

Step 1

Take a bowl add white flour, atta, baking soda, salt, ghee, milk, water and mix for 20 minutes until the dough is prepared and cover it for 2 hours.

Step 2

When the dough is ready take a small piece of dough and roll it with the rolling pin.Heat the pan, pour half tsp of butter and place the naan and fry until golden brown.Naan is ready.

Ingredients for making raita

  • yogurt 2 cups
  • salt 1 tsp
  • black pepper 1 tsp
  • vinegar 1/2 tsp
  • cucumber (chopped) 1
  • onion small (chopped)1
  • tomato (chopped) 1

Method of making

Step 1

Take a bowl and add yogurt, salt, black pepper, vinegar, cucumber, onion, tomato and mix well. Raita is ready.
