Korean – Gopchang

In Korean cuisine, Gui is known to be Grilled items of food. It can be grilled meat, grilled vegetables, grilled seafood, Beef organs and etc. Gopchang is a dish of Korean Cuisine, belongs to the GUI category. It can be the small intestine or Large intestine of animals like cattle, goats, pigs, Cows, etc. This is a very unique dish in which intestines are marinated by spices and sauces then grill over the burnt charcoal for a smoky barbecue flavor. This is cut into small bite-sized pieces that can be bite-size served with rice. This is rich in fat and has tough elastic tissue that takes time to cook. Heat must be of low intensity that can lock the juices of meat inside and the fat that melts makes it more delicious when goes with marinated spices. This is not the only way to cook Gopchang, it can be cooked like this way and added to soups, It can be added to Hot-Pot stew and also used as sausages when not cut into bite-size.

Ofal is the variety of meat organs of cow, goat, lamb and even any animal that is used on food and cooking. Many organs that can be poisonous for the health is like not in this list. Many edible organs are given in the list of OFAL, in which intestine is also a part of healthy meat of organ.

  • Heart

Gui is the Korean cuisine category in which grilled items are listed like it can be grilled beef, grilled vegetables, grilled fish, grilled organs, etc. Grilling has many methods like over charcoal, for barbecue effect, roasting like in grill oven, pan grilling using a grill pan. These food items grilled can be consumed as snacks, added to the stew for grilled meat stew as hotpot. It can be added into soups, into the rice, and served with rice. It can be consumed as Anju or with sobu.


In offal Gui we have items like organs that can be cooked by grilling technique.

There are many dishes of offal that is included in gui category :

  • MACKCHANG GUI : Grilled pork large intestine
  • GOPCHANG GUI : Grilled small intestine.


It is served with many different items like the following :


Gopchang jeongol is a beef tripe hotpot. It is spicy Korean Stew or broth that can the beef tripe strips. This tripe are grilled with vegetable dipped into broth. It is considered as spicy broth with seasonings, vegetables and beef strips like meat and intestine.


Cooked over the charcoal and fire make it smoky with the smoke coming off by adding oil over burnt charcoal. This can be done by direct fire, dry heat, etc.


This is Korean blood intestine. In this dish, small intestine are filled with blood. This is made by steaming and grilling. It can be of mince meat, blood, vegetables, etc.


  • Beef tripe / small intestine : 500 grams
  • Red pepper : 1 tbsp
  • Soy sauce : 1/2 cup
  • Mirin : 4 tbsp
  • Ginger juice : 1/3 cup
  • Salt : 1 tsp
  • Scallions : 2 branch
  • Spinach : 1 cup
  • Cheongyang : 4


  • This is the beef tripe dish that can be marinated by spices like pepper, salt, mirin, ginger juice, soy sauce, red pepper.
  • Now stuffing can be prepared by spinach and scallion with cheongyang.
  • Fill this vegetables into the marinated intestine.
  • Now grill them on charcoal and serve.
