Zambia – Nshima

A cuisine is a traditional cooking habit. Traditional cooking habits are usually characterized by local or traditional cooking habits, local tools at times, and in particular, traditional ingredients used in the preparation of any dish. This is a Zambia cuisine and most African cuisines are spicy and above all delicious and satisfying. Nshima is one of the cuisines, Zambians consider as real food. It is heavy and made up of a combination of other spicy delicacies. Follow guide below;

Kitchen tools needed

  • Knife for cutting
  • Chopping board 
  • A grill pans 
  • Pots you will use in cooking
  • Bowl 
  • A wooden 
  • Table spoon 


  • Three large onions
  • 2 packs of corn meal 
  • Salt to taste
  • A bunch of kale 
  • Beef ribs 
  • 1 ½ cup of plain peanuts 
  • 1 bunch of kale 
  • Cray fish
  • Ginger
  • Dry fish 
  • Maggi 
  • 10 pounds bag of red kidney beans 


  • I have written articles on beans and corn and how the can be prepared easily. But I will always write about it and keep reminding those who may have forgotten and still reading this. When have a meal you want to prepare and beans in inclusive, make sure in order to reduce cost of fuel wood or gas, you should sock the beans in water over night before the official day for you cooking. this helps to soften the bean and ease cooking. 
  • Next day, drain your beans and put in a main cooking pot, and boil for about an hour until beans in half done. Remove, drain and wash well with clean fresh water. Keep aside. 
  • Prep your spices for cooking your beans. Chop your onions and keep aside. 
  • Clean your ginger and blend with ginger. When blending with ginger, make sure those eating the meal also consume pepper. 
  • Blend crayfish and keep aside.
  • Chop tomatoes and keep aside. 
  • Heat oil in main pot, fry onions and tomatoes until translucent. Add your beans and stir well. cover pot and allow for about 25min open and add water, add crayfish, add scattered fish, ginger, fresh pepper and cover pot. Add some chopped onions, add salt to taste and maggi and cover pot for beans to get fully ready. This should take 45min approximately. 
  • Allow pot of beans if you cooking on three stone fire side, let it remain heated. Your cooking process is not over……
  • Chop your beef rips into eatable slices.
  • Prepare your ginger with salt and Maggi. Rob on the beef ribs and grill. 
  • In a small cooking pot, heat up oil and fry tomatoes and onions.
  • Add your beef meat and stir well. Add half cup of water and boil well. This makes your beef stew saucy. This should take about 5min. when it thickens, remove and keep aside.

Cooking process is not over:

  • Prepare your Kale. Put water in a pot and bring to boiling point. Chop your kale and add into the boiling water. Add salt to taste. 
  • Cover pot and allow your kale to cook well. 
  • Grind your peanut and keep aside. 
  • When your kale is wilted, reduce the water in the pot and put back the water in the pot. Add your ground peanuts, onions, tomatoes, salt to taste and Maggi. 
  • Add your curry powder close pot and allow for 10min for all ingredients to blend. 
  • Remove and keep aside.

Cooking process is not over:

  • Prepare your Nshima, that is how it is called in Zambia, in Cameroon, it is called fufu corn. This is common here. In Cameroon, fufu corn is common and it is eating as an accompaniment with so many other sauces. 
  • Sieve your corn flour and allow in a tray. 
  • Boil water in a pot. When the water is boiled, deduct some of the boiled water in a bowl, get the sieved corn and put in the pot of boiled water while you stir immediately so that you avoid lumps. While the corn flour thickens, if too thick add some more water and stir well using a wooden stick. If too watery or light, add some sieved corn flour while you stir well still. When it gets ready, you can put in warmed plantains leaves according to the culture of the Cameroonians, as well as you can put it in plastic peppers for reservation.  
  • Finally, LOL, I know the cooking process is pretty long. But you will love it. Serve in separate dishes and eat using your hands. It will be more enjoyable eating using your hands and it is also traditional eating with your hands. So, wash your hands well and….
